Also, I decided to go ahead and list the recipes from the book that work with the GAPS Intro diet — here’s the full list I compiled, along with any modifications that would need to be made for Intro:

 

Intro Stage 1-suitable recipes from Against the Grain

  • Sausage Gumbo (without the cauliflower);
  • Garden Vegetable Soup (without the beans, and without sautéing the veggies, just putting everything in raw with the stock);
  • Vegetable Beef Soup and Stuffed Pepper Soup (both without searing/sautéing the beef or veggies, just putting everything in raw with the stock, and without olive oil);
  • Beef Tips with Portabello Mushrooms (without sautéing the veggies before adding the stock, and omitting the olive oil and wine)

Intro Stage 2-suitable recipes from Against the Grain

  • All of the dishes listed above in Stage 1, with raw egg yolks added when serving

Intro Stage 3-suitable recipes from Against the Grain

  • Garden Vegetable Soup (omitting beans), Vegetable Beef Soup, Stuffed Pepper Soup, and Beef Tips (With all of these you can now sauté the veggies first – make sure to use coconut oil or other healthy fat instead of olive oil);
  • Sausage and Peppers with Spaghetti Squash (substituting coconut oil for olive oil);
  • Sausage Gumbo (now with the cauliflower);
  • Chicken with Sundried Tomato-Cream Sauce (if you’re ok with coconut milk, substituting coconut oil for olive oil, and also adding the chicken after the stock, instead of pan-frying it with the veggies);
  • Vanilla Custard (again, if you’re ok with, and have GAPS-friendly, coconut milk)

Intro Stage 4-suitable recipes from Against the Grain

  • Fresh Herb Burgers;
  • Beef Stir-Fry (using coconut oil or other healthy fat for frying oil);
  • Garlic-Rubbed Pork Chops;
  • Tomato Cream Sauce Chicken (substituting coconut oil for olive oil);
  • Blackened Fish;
  • Lemon Herb Roasted Chicken (with ghee substituted for the butter);
  • Chicken with Sundried Tomato-Cream Sauce (if you’re ok with coconut milk, and substituting coconut oil for olive oil – but you can now pan-sear the chicken before adding stock)
  • Stuffed Pepper Soup (you can now add in olive oil when serving!) – and any of the other soups/main dishes listed above with olive oil added at serving as well;
  • Onion Rings;
  • Beef Jerky;
  • Apple Upside Down Muffins (substituting ghee for the butter, omitting the baking soda if you are dealing with low stomach acid issues—or letting batter sit for a little while for the acidic honey to neutralize the baking soda, and omitting the apple pie filling);
  • Chocolate Chip Bread (omitting the chocolate chips – I know, Intro is not fair.)

Intro Stage 5-suitable recipes from Against the Grain

  • Fish in White Wine Cream Sauce (if you’re ok with, and have GAPS-friendly, coconut milk);
  • Salisbury Steak;
  • Beef Tips with Portobello Mushrooms (substituting coconut oil for the olive oil);
  • Seafood Bisque (if you’re ok with, and have GAPS-friendly, coconut milk, or omitting the coconut milk);
  • Salad Dressing (to go on all those new yummy raw veggies you’re introducing);
  • Apple Upside Down Muffin filling (omitting arrowroot powder)

Intro Stage 6-suitable recipes from Against the Grain

  • Banana Pancakes (if you tolerate coconut flour, and garnished with fresh fruit, if you like!)

 

I hope this list is useful if you’re otherwise overwhelmed by the Intro diet stages.  It is manageable, but sometimes it really helps to have a guide to tell you what and how to cook something when dinner needs to be on the table quickly and without too much thought!
